Summer Solstice


Today marks the longest day of the year.

In Alaska, that equals A LOT of daylight!!

Sunrise: 4:21 a.m.

Sunset: 11:42 p.m.

Take note of how high the sun is still at 9:00 p.m.



Craig and I took a walk to enjoy the sunshine this evening.

Good, healthy food does not have to take a lot of time or be complicated!

If anything, most of my meals (especially breakfasts) do not take a lot of time to make!


Today’s breakfast:

Step 1: Using a fork, mash 1/4 avocado in a small bowl or on a plate.

Step 2: Add a squeeze of lime juice (or lemon, but I prefer lime juice) to the mashed avocado.

Step 3: Add a dash of salt and pepper and mix to incorporate.

Step 4: Spread on top of toasted bagel, English muffin, or bread


I love this for breakfast. I have been making this for several years now, and that’s saying a lot because I rarely make the same thing again and again.

I officially dislike the eye doctor as much as the dentist.


Up until today, I have never had my eyes dilated before.

Seriously?!?! That was not cool! And neither were the sunglasses.


Yes, I had to wear the free, goofy sunglasses they give you at the eye doctor because I left mine at home.

It wasn’t sunny when I left, so I figured I wouldn’t need them today.

  1. So happy to have found your site…. it’s so cool to see your neck of the woods. Alaska is somewhere I hope to one day visit with my family. It looks so beautiful! I love that you guys were able to take a walk that late at night ~ it looks like it’s the middle of the day. That must be so wild! Have a great day!

  2. I haven’t had my eyes dilated in a long time, but it is definitely not a fun experience and I also had to wear the goofy free sunglasses. They always seems to surprise you with it, too. They couldn’t just say, “Oh hey, we may dilate your pupils, so you might wanna mentally prepare and bring some shades.” I need to visit Alaska so I can experience the crazy sunlight you keep posting about. Looks incredible!

    PS – I would be interested in guest posting, although I’ve never done it before so you’ve been warned. 😉

  3. I’ve been to Alaska once, June of 2008. It was amazing and so gorgeous.

    I love mashed avacado on toasted Ezekiel bread, yummo!

    And I’ve had my eyes dilated like that once, bah humbug.

  4. I love avocados, I usually put them on my wraps with turkey. I have never had to deal with vision problems, but I hate going to the dentist. This year alone I had about 5,000 dollars worth of work on my poor teeth…never again!!

    A couple of days I will see you I am very excited to see you and the rest of the family. I don’t mind the eye doctor but do not like the dentist. I guess with lasix being done I had the dilation done so many times I get used to it. Read last couple of postings good to hear about your run sounds like a hard course too with running on a gravel and trails for that many miles.

  6. Oh my gosh, I HATE having my eyes dilated! Dilation and that little air puff machine that they use to blow in your eye. I have no idea what purpose that serves. No fun.

    I haven’t ever had avocado on toast or a bagel for breakfast but it looks and sounds delicious! Great idea!!

    I would be interested in doing a guest post if you still need someone!

    I hope your soreness is starting to go away! Congrats, again, on an amazing run!!
