Spring Break

Spring break is sure starting out like spring . . . . . chirping birds, sunshine, melting snow. . . .this is all good in my book!!

I’d like to think this good weather is going to stick around, but I know we will probably get more snow before the real spring comes. 😦 But I’ll take it for now! 🙂

Just a few notes about the granola bars I made yesterday:

– Someone asked me what pepitas are: pepitas = pumpkin seeds

Sometimes the inside, hulled part of the pumpkin seed is referred to as a pepita.

– These granola bars did not stay together like I thought they would. I did substitute agave nectar for the brown rice syrup—could this by why? I’ve never used brown rice syrup before.

Last night we went over to my in-laws for a little birthday celebration.

I got this super cute running shirt from my father-in-law and mother-in-law.

The shirt is sweat-wicking and fits really well.

And the saying totally fits me! 🙂

We then sat down for a nice homemade meal. Caesar salad

My mother-in-law’s specialty: lasagna.

And a delicious meal topped off with some Haagen-Dazs ice cream. Just enough to satisfy my sweet tooth.

I’m enjoying a little Bachelor action tonight—can’t wait for the season finale next week!

  1. i keep hoping it’s spring! it gets super nice during the day while I’m stuck inside at work and still hovers around 30 degrees when I can actually run outside. not awesome.

    And, anything Ben and Jerry’s…especially when chocolate and peanut butter cups are involved.

    Here, its finally beginning to feel like spring! It rained fresh spring showers this weekend and today has been sunny and breezy.

    My favorite icecream at the moment is this stuff called Birthday Cake Sprinkles icecream from Archor Farms. Nothing compares! It has bits of vanilla cake and frosting throughout- YUM.

  3. Spring is no where near in sight!! It snowed last night and was still snowing this morning. Plus, flood season has to come first.
